I wanted to share a recipe that really helps me when I am watching my calories and needing something to munch on guilt free.
A couple of years ago I came across a recipe that mentioned these Turkey Lettuce Rollups! I had to give them a try and they were wonderful! When I first saw them, I didn't think their appearance was very appetizing, however they are filled with some yummy goodness! There are actually so many different ways to make these! It's the perfect thing for me to eat during the summer months! I will give you the list of how I make them!
I usually make 5 roll ups for my snack, but they are so low in calories (only like 18 per roll up!) You can make as many as you feel like eating with very little guilt!
Ingredients
5 Lettuce Leafs (rinsed)
Sliced Deli style Turkey (I use Oscar Mayer)
1/2 cup tomatoes (diced)
1/2 cup onions (chopped)
little mustard (you can substitute for a low cal dressing)
little salt and pepper
I lay my lettuce leaf flat and lay 1 slice of Turkey out flat on top of the lettuce.
Next I add the diced tomatoes and onions on top of the turkey.
I squirt a little mustard and then salt and pepper a little.
I then begin to roll the lettuce up with all the contents on the inside! I then get to enjoy!
This is such a simple recipe and it can be adjusted to your liking. You can fill with any kind of vegetable you like or use a low calorie dressing in place of the mustard. You can even add shredded cheese! I like to keep mine as low cal as possible!
I would love to hear how you make these your own creation!
